HARVEST
By hand at the end of September. Passerina is usually harvested around the middle of this month.
On old organic vineyards, harvesting is delayed until the end of September as in the case of Cimula.
SOIL TYPE Medium texture, with a high presence of gravel.

VINIFICATION
Estate grapes quickly transported to the company, chilled to 5° and processed at low temperature. After the soft pressing of the grapes, in the absence of oxygen, the free-run must, the highest quality, is immediately separated. Fermentation takes place at a controlled temperature.
MATURATION
Once fermentation is complete, the wine is placed in steel vats to clarify and mature. Continuous monitoring, racking and remuage give the wine decisive and qualitative organoleptic characteristics. In the month of April following the harvest, the wine is bottled. After a month of refinement in the bottle, the wine is put on the market.
ORGANOLEPTIC CHARACTERISTICS
Straw yellow color, hints of white flowers and cut grass on the nose. Full, savoury and soft taste with notes of Williams pear.
