HARVEST:
Grapes are hand-picked, placed in small containers, and immediately transported to the winery for processing. Harvest takes place early in the morning or late in the afternoon to avoid the hottest hours of the day. Dry ice is used during harvest to inertize the grapes from oxygen and lower their temperature.
SOIL TYPE Medium texture, with a high presence of gravel.

FERMENTATION:
After destemming, the grapes are transferred to stainless steel fermentation tanks. As soon as the cap formed by the skins lifts, the must underneath, which has already reached the desired color, is removed. A white fermentation begins at a temperature of 15°C until the sugars are exhausted.
Once fermentation is complete, the cloudy wine is transferred to perfectly clean tanks to clarify. The wine is removed from the heavy fermentation lees and left on the fine lees.
AGING:
In stainless steel with continuous riddling to extract beneficial properties from the fine lees. In February, the wine is clarified, filtered, and bottled. It is released for sale in March following the harvest.
